Industrial pasta and fresh pasta are very different. The last ones, more tender, with a very pronounced egg taste, are enough to make you salivate.
Making it with a pasta machine is not complicated, but it requires equipment, time and method.

Prepare your dough
Pasta has few ingredients. To make pasta for 4 people, you need:
- 300 grams of wheat flour
- 100 grams of durum wheat flour
- 4 eggs
With these ingredients, start by sifting the wheat flour to avoid too large grains. Then, make a hole in the heap of flour to put the contents of the eggs and a small pinch of salt.
Mix everything with a spatula. Be quick to have a heterogeneous preparation. Usually about ten minutes are needed to mix by hand. With a small blender, this is faster.
Make a ball with the dough and set it aside for about 30 minutes.

Prepare the pasta machine
Plug your machine into an electrical outlet. Some models are noisy, so put it in an area where the noise does not interfere with the life of the fireplace.

Preserve your pasta
Being a culinary champion behind the stove is a great start, but if you don’t know how to store your preparations, your efforts will often be wiped out in a matter of hours or days.
Once the pasta is cut, keep it in the fridge for up to 48 hours and not in your kitchen cupboard as you usually do with your industrial products.
If you have made a large amount of pasta, you can store some of it in your freezer for a month. But, the day you eat them, consider taking them out of the freezer at least two hours before they cook so the water evaporates.
