The tajine is a word specific to Moroccan culture. In reality, it means both a traditional conical-shaped container and the meal that is simmered in it.
As for the tagine (meal), it comes in various variations which all have the particularity of being exotic, with strong spicy flavors and high colors. Let’s find out together, what to put in the real tagine.
Ingredients to use for cooking the tagine
Tagine is not just any dish. To do this, essential ingredients must be used for the preparation of the traditional tagine. For a dish intended for 4 people, you will need:
- 1 kg of lamb cut into pieces (make sure you only retain the most tender parts)
- 4 firm potatoes
- 2 good sized carrots
- 3 very fresh tomatoes
- 1 eggplant
- 1 courgette
- 2 onions
- 3 cloves of garlic
- 1 half glass of olive oil
- 3 teaspoons of ground red pepper
- 1 lemon
- Spices (including coriander, cumin, yellow saffron, ginger powder, ground black pepper, and cinnamon). Plan 2 teaspoons for each spice
Depending on the variations you want to cook, you can choose chicken, fish or seafood instead of lamb. You can also use green olives, almonds or dried fruits.
Tagine cooking steps
Here, we will see step by step, the cooking process of the lamb tagine. It is essential to follow these steps in order to obtain a authentic dish. If you don’t have a tagine (the container), use a slow cooker.
This step consists of prepare your various vegetables. Already, start cleaning and cutting each one. Roughly chop the carrots, tomatoes, zucchini and eggplant. Cut the potatoes into large pieces, the onions into rings and the garlic very thinly.
This step consists of brown the pieces of lamb in hot olive oil. Watch carefully for 10 minutes. Make sure especially that each side of the different pieces is golden brown.
Once your pieces of meat are golden brown, lower the heat. Then add your various vegetables, making sure to start with the firmest ones. The most tender will pass in last position. Between two layers of vegetables, add your different spices and salt. Sprinkle it all with a little water and simmer for 30 minutes.
After 30 minutes, add the tomatoes, onions and garlic. Let it cook for another 15 minutes.
If the result seems a little dry, extend it with a little water. Cook for a few minutes then remove your tagine from the heat. Decorate it a thin slice of lemon.
Once your tagine is ready, you can serve it, accompanied by unleavened bread, of White rice or even couscous. It is best to eat it hot. Do not forget to accompany it with the traditional tea.
